Beef liver with apple and onion

Ingredients

for 4 servings:

  • 1.5 onions

  • 5 tablespoons butter

  • 2 apples

  • 2 tablespoons sugar

  • 6 slices of beef liver

  • 1 tablespoon flour

  • 3 tablespoons Calvados

  • Salt

  • pepper

Preparation :

First, cut the onions into rings. Then heat 1 tablespoon of butter in a pan and fry the onion rings until translucent. Remove from the pan and set aside.

Now peel the apples, remove the core and cut into slices about 0.5 cm thick. Heat 2 tablespoons of butter in the pan, add the sugar and let it take on some color. Place the apple rings in the pan and let them caramelize on all sides.

In the last step, pat the liver slices dry, roll them in flour and fry them in a second pan in the remaining hot butter over medium heat on both sides. Pour the Calvados over the apple rings and add the onion. Season the liver with salt and pepper and serve with apples and onions.
