veal liver with rocket salad

Ingredients
for 4 servings:
400 g veal liver
1 bunch of arugula salad
2 chicory plants
2 tablespoons vinegar
2 tablespoons oil
1 teaspoon mustard
2 tablespoons fresh herbs
125 g crème fraÎche
100 g butter
2 slices of wheat bread
1 pinch of sugar
salt, pepper
Preparation :
Clean, wash and spin dry the lettuce. Mix the vinegar, oil and mustard. Season with salt, pepper and sugar. Stir in the herbs and crème fraÎche. Cut the wheat bread into small cubes. Heat 50 g butter in a pan and fry the bread cubes until golden brown.
Rinse the veal liver, pat dry and cut into strips. Heat the remaining butter in a pan and fry the veal liver strips in it. Mix the salad and sauce and arrange on plates. Distribute the liver strips and bread cubes and serve.
