veal breast tip with peperonata

Ingredients

for 4 servings:

  • 1 kg veal breast tip

  • Red and green peppers

  • 50 ml rapeseed oil

Marinade:

  • 100 g mustard

  • 200 g ketchup

  • 1 tablespoon paprika powder

  • 2 garlic cloves

  • 1 tablespoon thyme

  • 1 tablespoon rosemary

  • 1 tablespoon sage

  • 500 ml rapeseed oil

Preparation :

Make a marinade with the ingredients listed. Marinate the veal breast in it for at least a day. Brush some of the marinade off the meat, sear the meat on all sides and continue cooking in the oven at 160° C for about 20 minutes.
Cut the peppers lengthwise into sixths, remove the seeds and skins, and blanch for 6 minutes.
Fry the peppers in oil and serve next to the meat.

Serve with fresh garlic bread.


Tip: Veal breast also tastes great cold. Why not serve it sliced at a cold buffet?
