veal fillet slices

Ingredients
for 4 servings:
350 g veal boiled fillet
1 large onion
1 garlic clove
2 tablespoons oil
250 g leaf spinach, frozen
8 slices of raclette cheese
1 baguette, approx. 200 g
2 tablespoons crème fraîche
salt and pepper
nutmeg
Preparation :
Peel and dice the onion and garlic. Heat 1 tablespoon of oil and sauté the onion and garlic. Add the spinach (still unthawed) and 8 tablespoons of water. Cover and sauté for 10-15 minutes. Heat 1 tablespoon of oil in a pan. Pat the boiled fillet dry and cut into 8 slices and fry for about 2 minutes on each side. Season with salt and pepper. Remove.
Remove the crust from the cheese. Cut the bread into 8 diagonal slices and place on a baking tray. Stir the crème fraîche into the spinach. Season to taste with salt, pepper and nutmeg. Top the bread with spinach, fillet and cheese. Bake under the hot grill for 2-3 minutes or in the preheated oven on the highest setting for approx. 5 minutes.
